It's about a week or so after you've had a party and made delicious dishes for your loved ones to enjoy. As you are scanning your fridge to find any type of inspiration to make dinner, you fall upon a half used jar of artichokes. Hmmm, what to do?!?
You do what any other woman is doing to come up with new and creative recipes.... you stalk pinterest for hours. I happen to have a very diverse and scrumptious food board and came up with Artichoke Crusted Chicken. I made small changes and this is what I deliver to you. It's amazingly good.
Ingredients
4 boneless chicken breasts
2 tbsp olive oil
1/2 cup sour cream
1/2 cup artichokes (drained and chopped)
6 ounces shredded white cheddar cheese
2 tsp minced garlic
salt & pepper
garlic powder
Directions: Heat olive oil in saute pan. Season chicken breasts to your liking with salt, pepper and garlic powder. Saute until cooked through and juices run clear. In a bowl mix sour cream, artichokes, cheddar cheese, minced garlic and season with pepper. Place chicken in a baking dish, top with artichoke mixture and broil on high until cheese mixture is melted and lightly browned.
That is it! Easy and delicious!
It's like smothering chicken with spinach artichoke dip without the spinach... but I'm sure you could add it in there. A side of sauteed spinach would complete the dish!

Back At It
Yet again, time has passed way too fast and I've let certain things slide. I have been making tons of new recipes, eating delicious food and I have not taken a picture!
I vow now to be better about what I am passionate about. I don't blog for anyone else but myself. I cook new recipes because they make me feel creative. I love to see the expression on my husband's face when I've nailed a recipe..... and I love to share them with whoever reads this nonsense.
So after this weekend, it's time to get back at it. If anyone does read this, be prepared for some writing overload!
